I am the kind of person who likes to snack all day so when I find a healthy snack recipe that actually tastes yummy, I’m all over it. I found this recipe in a magazine and loved them so much I just have to share it with you. It’s compliments of MarniWasserman who offers a delicious list of healthy cooking classes.
3/4 cup almond butter
1/4 cup tahini
1/2 cup maple syrup
1/2 cup sesame seeds
1/4 cup raw cocoa powder
1 cup oat bran
1/4 cup goji berries or cranberries
1/2 cup quinoa flakes
1/2 cup unsweetened coconut
- Add nut butter, tahini and maple syrup to a bowl or food processor and combine until smooth.
- Add sesame seeds, cacao powder, oat bran, berries and quinoa flakes and blend until mixture forms a dough-like consistency.
- Spread coconut on plate.
- Roll mixture into 1-inch balls and roll in shredded coconut.
- Cover and store in refrigerator for up to two weeks (unless you gobble them up quicker).

The tahini and sesame seeds make these power bites loaded with calcium. There’s also iron from the cacao powder. Finally, the almond butter and quinoa flakes will give you energy between meals or before a workout. Two of these balls make a great snack on the go! For a caffeine-free option try carob powder. You could also try dried currants or cranberries instead of goji berries.
